Upcoming Wine Tasting: “Il Sud Italia” — A Journey Through the South

August 15 & 16  | Wines of Campania · Sicilia · Sardegna

Held at all three locations: Divino Taipei, Focoso Taipei, and Divino Tianmu

Once a quarter, we stop selling wine and start telling its story properly.

These pairing lunches are not built to be profitable, and that is the point. They exist because a wine list, however carefully written, can only say so much. Behind every bottle we pour is a farm we know, a family we buy from, and a set of decisions — about soil, about patience, about restraint — that deserve more than a line of small print on a menu. Four times a year, we sit you down and pour those decisions by the glass.

This edition travels south. Campania, Sicilia, Sardegna — the Italy of volcanic slopes and salt wind, where the wines carry sun and stone in equal measure.

The Table

We open with our 24-hour sourdough focaccia, butter and anchovy, and a glass of Fratelli Cosmo Prosecco — a northern handshake before the journey begins.

Then south. Grilled radicchio with smoked scamorza, poured alongside Tenute Dettori's Renosu Rosso — Cannonau from Romangia, farmed the way Sardinians have always farmed it, honest and unpolished in the best sense.

The second antipasto is ours entirely: Wagyu prosciutto, M9 striploin that we salt-cure and dry-age in-house, sliced thin. With it, Tasca d'Almerita's Etna Rosso, grown on the volcano's black soils.

The primo is hand-rolled spaghettoni with sea urchin, lifted by a Zibibbo from Vini Felici — Sicilian sunlight in aromatic form.

And then the reason many of you will come: the costata, dry-aged 60 days in our own aging room. Sixty days is where the transformation completes itself — the concentration, the depth, the faint sweetness that only time produces. We pair it with a wine that understands time the same way: Pago dei Fusi Taurasi DOCG 2009, Aglianico from Campania with seventeen years behind it.

We finish with Basque cheesecake and limoncello, because journeys should end warmly.
